Finca Waliki

Roaster notes

We last visited Finca Waliki during our buying trip to Bolivia in July this year. The crop came in earlier than usual due to the 2024 rainy season starting in September of that year, rather than October. This shifted the entire crop earlier by between four to six weeks, and our buying trip earlier as well. Ripening was very evenly distributed across the harvest, and this year’s crop quality is expected to be high. We have been buying the Java cultivar from Waliki since the farm’s first harvest and are always impressed with its delicate balance of spicy fruit and sugary body. Java has done exceptionally well in Bolivia, adapting to the growing conditions there remarkably well, and it shows in the flavour profile.
