This exceptional Geisha from Finca Deborah in Boquete, Panama is produced by Jamison Savage using a meticulous natural process with controlled nitrogen maceration. Only cherries reaching perfect maturity at 21-24 °Brix are selected, then fermented anaerobically for over fifty hours before being dried on specialized African beds under shaded conditions. The cup reveals an elegant complexity of black cherry, blood orange, and red wine with a subtle warmth reminiscent of whisky—a vibrant expression of this regenerative farm's unique terroir.
