The carbonic maceration technique ferments whole cherries in a CO2-rich environment, enhancing fruitiness and complexity before the beans are dried on raised beds. This careful approach yields a high-clarity cup bursting with tropical notes of cherry, passion fruit, and prune, offering an explosion of flavor without excessive funkiness.
