From Finca El Progreso at 2,300 masl in Cusco, Peru, Bilibran Tello Quispe crafts this washed coffee from Geisha and SL09 varieties. The cherries undergo a unique 48-hour resting period followed by anaerobic fermentation before being sun-dried for 12-15 days. This careful process yields a juicy, smooth cup with aromas of camellia and sugarcane, flavors of white grapes and sugarcane juice that linger on the palate.
