Roaster notes

This coffee comes from the Urrutia family's farm at El Ingenio in El Salvador. At their San Antonio wet mill, cherries pass through multiple depulping lines calibrated for different ripeness levels, followed by a 13–14-hour dry fermentation before washing and drying on guardiolas and brick patios. The cup reveals notes of dried fruit, green apple, and fudge with a smooth, rounded mouthfeel.
