For more than seven decades this family-owned farm has cultivated coffee beneath a two-tiered canopy of native shade trees, allowing cherries to develop slowly and build complexity. The estate practices careful manual harvesting—selecting only ripe fruit that is then depulped, washed, and sun-dried.
