This Pink Bourbon from Virginia Salazar in Quindío, Colombia offers an elegant cup with bright raspberry, white grape, and floral aromatics. The coffee follows an extended washed process designed by collaborator Felipe Arcilia—whole cherries ferment for 24 hours open-air, then 50 hours in sealed tanks before being pulped, washed, and slowly dried on raised beds to 11% moisture.
