Colombia, Papayo
Roaster notes
This Colombian coffee comes from Jairo Arcila's Santa Monica farm in Quindio, where he has spent over 40 years crafting exceptional beans. The unique Papayo variety—named for its papaya-like cherries and possibly linked to Ethiopian ancestors—is transformed through carbonic maceration, a winemaking technique that creates an intensely fruit-forward cup with notes of sea buckthorn, orange wine, and persimmon.
