This coffee comes from the Peñas Blancas collective in Colombia's Huila region, where small producers unite around a centralized processing facility to access advanced infrastructure and fair compensation. The Yellow Bourbon variety undergoes a distinctive natural anaerobic process with thermal shock treatment followed by mosto inoculation fermentation, creating a cup characterized by bright ginger, sweet cherries, zesty lime, and delicate floral aromatics.
