This organic coffee from Peru's La Palestina farm grows at 1800-1900 meters where Red Bourbon and Caturra varieties mature slowly in partial shade. Hand-picked cherries undergo a distinctive pre-fermentation before classic wet processing, then dry on raised beds with initial drying under shade to preserve delicate flavors.
