Roaster notes

This organic coffee from Peru's La Palestina farm grows at 1800-1900 meters above sea level, where Red Bourbon and Caturra varieties mature slowly under partial shade. The beans are hand-picked and carefully sorted before undergoing a distinctive wet-processing method featuring pre-fermentation followed by depulping and classic fermentation. After washing, the coffee dries on raised beds with an initial shaded drying period to preserve its delicate character.
