In the sun-drenched highlands of Brazil's Cerrado Mineiro, two seasoned producers have combined their expertise: Dair Assis Fava of Fazenda Quilombo and José Adalberto Guimarães Cardoso of Fazenda Aroeira. Together they cultivate Yellow Bourbon at altitudes up to 1,136 metres, where the region's stable climate and fertile soils allow cherries to develop a sophisticated flavour profile through meticulous natural processing. The result is a smooth cup with deep caramel notes, intense natural sweetness, and a full, syrupy body.
