Roaster notes

This microlot comes from Rogelio Espinoza's two-hectare La Bonita farm in Pinares village, Huila. The Java cultivar—originally brought to Indonesia by Dutch traders in the 19th century—is processed as an anaerobic natural here at 1400 meters elevation. Extended fermentation creates a funky, tropical cup with guava and chocolate notes, reminiscent of dark cherry bonbons with a boozy kick.
