Roaster notes

From the generous lands of Brazil's Cerrado Mineiro region, San Rafael is a traditional natural coffee grown between 800 and 1,300 meters altitude. The Catuai and Mundo Novo varieties are selectively harvested by machine from July through November, then dried in open air under the Cerrado sun—a simple yet masterfully controlled process that allows the cherry's sugars to fully integrate into the bean.
