This highland Arabica from Jinotega, Nicaragua is grown by the López family at Finca Los Papales, situated five kilometers from Jinotega city on the slopes of Cerro Chimborazo. The farm's distinctive topography and cloud forest climate create ideal conditions for quality coffee, with cherries harvested at 94% ripeness before undergoing a complete anaerobic fermentation process in sealed containers for 72 hours. The resulting cup offers a mild body complemented by bright orange notes and subtle licorice undertones.
