This washed Chiroso from Colombia's Tolima region delivers more sweetness than typical for its process, offering forest fruits gelato, black tea, and florals in the cup. Grown at Finca El Proceso, cherries were floated to remove defects, pulped, rested overnight, then washed before fifteen days of drying in marquesinas.
