This coffee comes from Paulo Nelci da Silva and his family, who have tended their 37-hectare farm, Sitio São Bartolomeu, for generations. At elevations of 1100-1300 meters above sea level, they cultivate Red and Yellow Catuai varieties with careful attention to sustainability. The natural process coffee is dried in rotating dryers and on cement patios, yielding a creamy cup reminiscent of pistachio ice cream with cacaonibs.
