A decaffeinated single-origin coffee from the Kachalu cooperative in Colombia's Santander region, comprising approximately 60 smallholder farmers who have worked together since 1999 as one of the first projects of the Colombian coffee farmers' organization FNC. Each farmer owns an average of 7 hectares—significantly larger than the Colombian average of 1.5 hectares—with plantations characterized by high biodiversity, natural shade trees, and over a hundred bird species that provide natural fertilizer. This results in coffee that is naturally climate neutral. The cooperative has won multiple awards in the 'best rainforest coffee' category. BOOT Coffee has partnered with Kachalu since 2005, implementing rigorous quality control where each lot is tasted three times locally plus by their team. Farmers receive bonuses for coffees rated above 84+ or 85+ points. The decaffeination uses a patented CO2 process developed in 1988—an all-natural, organic-certified method using carbon dioxide at low temperature and pressure that preserves aroma and flavor compounds without chemicals.
