This decaffeinated specialty coffee comes from the Nasa We'sx indigenous community in Tolima, Colombia, where over 240 families cultivate beans at altitudes of 1,700 to 2,000 meters. The cup reveals a fruity-spicy character with notes of berries, brown sugar, malty sweetness, and fermented rum. Natural decaffeination using ethyl acetate from sugarcane preserves the coffee's aromatic depth for those who want flavor without caffeine.
