Panama Iris Estate Terroir

Roaster notes

Whole beans from Iris Estate in Boquete, Panama—a young Geisha farm that continues to improve each year. This washed coffee follows a meticulous "Terroir" process: only cherries with BRIX readings over 21 are harvested, then shade-dried for more than 10 days before a 90-day reposo rest allows the coffee to stabilize and absorb layered complexities within the parchment.
