From the Ratnagiri region of India comes this carbonic maceration microlot from a farm established in 1920 and operated by Ashok Patre across multiple generations. The coffee ferments for 72 hours in a carbon dioxide-rich environment before drying on raised beds for 31 days, yielding a cup with notes of Medjool dates, tomato vine, and toasted pinenuts.
