At Elida Estates' Aguacate Lot in Boquete's misty terraces at 1900m, Wilford cultivates Geisha under native shade trees. Cherries are hand-picked at peak ripeness and fermented for under 24 hours in cherry before being depulped, washed, and slowly dried in a purpose-built Dark Room with low temperature and humidity. This meticulous process yields a classic Panama Geisha profile—floral, citrusy, clean, and sweet—with remarkable stability and consistency.
