From a sloped inter-mountain valley called Sanani in Yemen's Sana'a region, this coffee benefits from supplementary irrigation via a permanent upper valley spring that helps farmers control flowering time. Rooftop and raised bed sun drying gives this natural process coffee its distinct character—a round, smooth cup with creamy sweetness and flavors of dates, dried tropical fruits, and berries.
