Roaster notes

This organic coffee originates from a community of farmers in Jaltenango, Chiapas, who united to rebuild their farms after the 2011 coffee rust disaster. Grown at high altitudes between 1200 and 1500 meters, the beans are hand-picked and washed using manual mills near the farms before being dried and transported for shipment. The lot is marketed under the brand Finca El Flamingo, named after a beloved nature reserve in Yucatán known for its flamingos.
