Roaster notes

Grown in the Motozintla region of Chiapas, Mexico, this decaffeinated coffee is cultivated under the shade of Ingas trees at altitudes between 1200 and 1320 meters. The blend features Catimor, Sarchimor, and Red Caturra varieties that are washed and dried on patios before undergoing a water-based decaffeination process developed by Descamex. This method preserves the coffee’s character while removing caffeine through steam exposure and filtration.
