Finca La Idolia
Roaster notes
Finca La Idolia is one for four adjacent farms owned by Fernando Díaz and his family. Like his father before him, Fernando grows Catuaí and Bourbon at La Idolia. New seeds are selected from the best performing trees on the farm, then cultivated at the farm’s nursery. At Santa Ana (one of the four farms from which we also buy coffee), Fernando grows Catuaí, Dilla, SL28 and Geisha. He is also running some experiments with Pacas, which should grow well in this region, and Mibirizi which is a variety from Rwanda and Burundi with a nice cup quality but susceptibility to some coffee diseases. Cultivar selection is an ongoing project on all farms. Trees need replacing as they grow less productive, and what was planted more than forty years ago may not be the best varietal to grow now. Fernando has a varietal garden with some fifty-five cultivars, of which, twelve are in production across the four farms.
