Co-fermented Watermelon
Roaster notes
This co-fermented coffee from smallholder farmers in Huila, Colombia begins with bright, juicy watermelon notes that settle into brown sugar sweetness and soft citrus. The cherries undergo an initial fermentation on the farms before traveling to Los Patios for a second fermentation with proprietary watermelon concentrate, followed by eight days of careful drying. Best enjoyed on a filter brewer where the fruit character can fully express itself.
