This Colombian coffee comes from El Silencio, where producer Jhoan works alongside his family with two permanent employees and five additional pickers during the harvest season. The processing involves floating ripe cherries in plastic tanks to remove defects, fermenting them in both plastic bags and tanks, then drying on high wooden beds known as "planchones." A classic coffee offering from Colombia's renowned growing regions, this lot captures the care and tradition of small-scale production at El Silencio.
