Grown at high elevations in Huila by Yobani Ramos and Yaved Guarnizo, this Sidra variety is cultivated using organic and biodynamic practices that prioritize soil health and slow ripening. The cherries undergo a unique 48-hour cherry-rested process before being fully washed and dried on raised beds under shade nets. This careful approach yields an elegant cup characterized by delicate jasmine aromatics and vibrant lychee notes, showcasing the complex sugars developed during the cool mountain nights.
