From Huila, Colombia, Fabian Acevedo's fourth-generation farm La Providencia crafts this coffee with meticulous care. Fully ripe Papayo cherries rest for 24 hours before being depulped and fermented in stainless steel tanks for 48 hours, then dried slowly over 15 days to preserve sweetness and structure. The result is a vibrant cup offering notes of blackcurrant, panela, and black tea.
