This exceptional coffee from Finca Monteblanco in Acevedo, Huila is crafted by third-generation producer Rodrigo Sanchez Valencia using an intricate co-fermentation process with dried coconut, cholupa fruit, and ten different yeast strains over eight days before the cherries ferment for 180 hours. The Purple Caturra variety was selected for its elevated sugar content, then washed and slowly dried on parabolic beds for up to thirty days near Colombia's protected Cueva de los Guacharos park. The result is a vibrant cup with tropical fruit character underscored by floral aromatics.
