This Colombian decaffeinated coffee from the Huila region comes from over 20 dedicated producers working along an isolated mountain range in the Andes near Pitalito, Acevedo, and Palestina. The beans are carefully hand-sorted on farms before being dried with precision to ensure consistent quality. Decaffeination uses ethyl acetate derived naturally from sugarcane at a facility in Manizales, where mountain water helps extract caffeine while preserving flavor compounds. This process imparts an additional dimension of fruity sweetness to the beans. The resulting cup offers soft acidity and a long, pleasant aftertaste.
