Maracay is a family-owned coffee farm on eight hectares, located along the winding mountain roads in Colombia's Armenia region. The farm is run by Luz Helena Salazar, who has dedicated her entire life to coffee growing. Her extensive experience combines with a strong desire to experiment and develop new flavor expressions – something clearly noticeable in this micro-lot of the Castillo variety. The coffee underwent a 72-hour anaerobic fermentation with wine yeast.
