This experimental microlot from Huila, Colombia uses a frozen berry co-fermentation process where carefully selected cherries are fermented alongside dehydrated forest berries including raspberry and blackberry. The result is an intense, expressive cup with layers of juicy blueberry, raspberry and blackberry throughout, supported by a rich, syrupy body with wine-like depth and a long, sweet finish.
