Roaster notes

This coffee comes from Selmira Ruiz's one-hectare farm La Palma in San Agustín, Colombia, at 1740 meters above sea level on clay-dominant soils with volcanic influence. Pink Bourbon cherries are selectively harvested at peak ripeness, fermented for approximately 48 hours in a controlled washed process, and dried slowly over 15 days. The result is a structured cup with high clarity, shaped by altitude, soil composition, and disciplined post-harvest management.
