This decaf comes from Huila, Colombia—a region known for smallholder production and coffees with clean sweetness and structure. It is a washed lot made up of Castillo, Caturra, and Colombia varieties, grown at 1,400 to 2,000 meters above sea level. The coffee is decaffeinated using the EA process (Decaf de Caña), which uses ethyl acetate to remove caffeine while preserving the coffee's natural character, resulting in a clean, balanced cup with good sweetness and bright but gentle acidity.
