This India Monsooned Malabar coffee comes from Tamil Nadu in South India and undergoes a unique monsooning process. Originally discovered when coffee shipped by sailing ship to Europe was stored below deck for months in humid conditions, causing beans to turn golden and lose their acidity. Today this 12-16 week process exposes freshly harvested beans to moist monsoon winds along India's west coast, creating an earthy cup with notes of spices and tobacco.
