This rare Papayo variety from Campo Hermoso in Colombia's Cauca region produces elongated cherries resembling miniature papayas, with a genetic lineage that remains mysterious—possibly a natural mutation of Caturra or related to Ethiopian landraces. The hardy trees ripen slowly at 1650 meters above sea level, concentrating sugars before carbonic maceration and washing unlock a cup bursting with jasmine, guava, and tutti frutti notes—a testament to modern Colombian coffee innovation.
