This Guatemalan Bourbon from Lot 13 in San Juan Sacatepequez undergoes a meticulous natural process where cherries are dried on sun patios for twenty days, then transferred to African beds in a greenhouse until reaching ten percent humidity. The ancient bourbon plants yield carefully selected cherries that develop festive notes of red grapes, winey character, and cacao.
