This Colombian coffee from the Cauca region is decaffeinated using ethyl acetate extracted from sugar cane—a unique process that removes caffeine while preserving the coffee's natural character. Grown on the high plateaus near Popayan, these beans benefit from volcanic soils and a stable year-round climate, with surrounding mountains protecting them from Pacific humidity.
