Colombia, Cauca - Sidra Bourbon, Washed
Roaster notes
Patio Bonito sits in Colombia's Cauca region on volcanic ash soil between 1,570 and 1,650 meters above sea level. Paola Trujillo grows Sidra, a rare variety believed to have genetic ties to Ethiopian Landrace coffees. The cherries undergo a 30-hour anaerobic fermentation following Cofinet's protocol, then dry on raised beds for 8 days. This slow process builds a delicate, crisp and lively character with notes of caramel, lemongrass, red fruits, pomegranate and tangerine.
