This washed Arabica from Colombia's Santander region comes from the Kachalu cooperative, where about 60 small farmers cultivate organic coffee at altitudes of 1100-1900 meters. The coffee flourishes under natural shade trees with high biodiversity—over a hundred bird species provide natural fertilizer—resulting in an almost entirely climate-neutral cup. Expect notes of dried fruit, chocolate, and cane sugar from this certified organic offering that has earned recognition as rainforest coffee.
