This exceptional Geisha coffee comes from Finca Deborah in Panama, where owner Jamison Savage pioneered the distinctive 'Echo' process. After hand-picking and de-pulping at optimal ripeness, the beans undergo carbonic maceration in oxygen-free steel tanks with cascara reintroduced for added flavor complexity. Following approximately 50 hours of fermentation, the coffee is gently rinsed and slowly dried on shaded raised beds to preserve balance and structure.
