This Colombian coffee from Wilber Gómez features the Pacamara variety, prized for its intensity and complexity. Processed as semi-washed (honey), it undergoes 48 hours of controlled fermentation with some mucilage left intact after pulping. The result is a cup combining floral aromatics with bright citrus fruit acidity, offering additional sweetness and a structured, weightier mouthfeel while maintaining the variety's vibrant defining characteristics.
