First released in 2021 to help shape the co-ferment conversation, this lot from Jairo Arcila returns as part of the 10-Year Series. The coffee undergoes a controlled process featuring 48 hours of anaerobic fermentation with strawberries, followed by washing and drying. This deliberate approach builds on the inherent structure of the Castillo varietal while introducing an intensely fruit-forward profile without compromising clarity or balance.
